Hey, guys, Kat here! I greatly apologize for the lack of posts! I haven't had much time for the blog lately because of school (and a fair amount of procrastination on my part), but now that it's Thanksgiving Break, I have been cooking lots with my mom! On November 12th, my brother, Andrew, turned eight years old! I can't believe it! I still call him a first grader all the time (he's in second) and he hates me for it, but I think this cake made up for it...hopefully! One thing you should know about Andrew is that he is mostly anti-chocolate (I don't understand how we are related!), so he asked for a plain white cake. Not even kidding. White cake. White icing. My mom and I tried desperately to convince him to at least have some chocolate icing, and being the sweet little boy he is, said fine in the saddest little voice ever, so my mom and I told him we were just kidding. Mostly. We talked him into some sprinkles on top of the cake to at least add a little color, which made it slightly better. Regardless, this is a bit of a dump cake, so don't judge! It was an easy way to save time in order to make all the other food for the friends and family. It pleased the birthday boy (as well as everyone else, I think), and that's all that really matters, right? I got this recipe from the booklet that came with our KitchenAid® Stand Mixer, and my mom and I both immediately thought something was off...it called for baking powder, but not baking soda! This most likely contributed to it not rising very well, but we'll know next time! Another thing that might have contributed to the last of risey-ness (new word! oh yes) is the fact that it didn't specify whether to use 9 inch or 8 inch pans. It said 8 or 9 inch pans. How am I supposed to know which to use?! Come on! I already said that I was doing this cake with my mom (we've never done the recipe before, so she insisted on helping me), and she told me to sift the flour even though the recipe didn't say to, and we don't exactly have the newest sifter out there. My hand was getting tired, so I just started hitting the sifter against the side of the bowl to hurry the process up, and my mom just took the sifter, flipped it over, and started hitting it! We did finish, though. But what neither of us realized was that a little metal piece fell out of it and into the mixing bowl. We mixed it up and everything, and when we poured the batter into the pans, I noticed a little gray thing that stood out against the white cake. My mom was looking at the recipe, and I tried asking her what it was. She said it was just a clump of flour without looking at it. I knew it didn't look right, so I took it out of the cake, and I held it up to the light; it was a piece of metal! I told my mom, and she laughed, saying she was sorry for not listening to me. For the rest of the afternoon, I kept joking about how I "saved lives". That would've been an interesting discovery for someone eating cake later... If you need a quick cake recipe, and your ideal food-audience (I don't know...) aren't big fans of chocolate, or you just want a nice, simple white cake, here's a great, easy recipe that isn't hard and doesn't require a lot of extra steps that will take you away from other things in case you are trying to multitask (or you procrastinated, like me!)
