Wassup, guys? Kat here! So...it's 2017, huh? Yes, I realize how late this is. I'm so sorry I haven't posted! I've cooked, I just haven't taken pictures. I'm so sorry! School has been crazy with the new semester, and math just got way harder. Anyway, at least I'm posting now, right? Right? Just a quick heads-up, if you don't want to hear about me and just want the recipe, just skip the next two paragraphs. So after seeing one of my friends in a cleaner version of the musical Grease, I have been obsessed. I had already seen the movie once or twice, but I hadn't been all that crazy about it. But after seeing my friend in it, I. am. obsessed. Every Friday night, I watch either Grease or Grease: Live on my computer and listen to the soundtrack during the rest of the week. I told you I was obsessed. Anyway, watch Grease. Like, right now (after cooking this, of course. Or maybe you're good at multitasking, I don't know, just watch it). Anyway, enough about my obsessions. This recipe is great because it's only 410 calories, and it's super filling! I also added some black beans for a little side dish, but they were just canned and reheated (shhhhh...). Also, the calories account for several toppings, like lettuce, tomatoes, and even sour cream! Unfortunately, not the beans, though. Oh well. So, the recipe itself is from Cooking Light (my mom is signed up for their meal planner), so I'm not trying to take any credit, here. Wow... this post is staring to feel like a giant advertisement... wow, I'm sorry. Well, how has your new year been so far? Are you sticking to those resolutions? I'm trying to lose some weight personally; yes, it's generic, but I've stuck to it, so far. I've recently become obsessed with Overnight Oats. I love taking vanilla low-fat Greek yogurt, milk, assorted fruit (mainly strawberries and raspberries), granola, and (here's the best part) dark chocolate chips! I take ten (about one per bite) and stir them in along with everything else in the morning, and it's great. By the way, if you haven't heard of Overnight Oats before, they're basically oats that you soak in milk and/or yogurt overnight and the oats get all thick and yummy by morning. Of course, you add fruit spices, and other stuff to mix it up, but that's the basic concept. Anyway, these burritos are a great, relatively quick and healthy meal, and the ingredients are easy to find. Try it out! Ingredients1 Tbsp Canola Oil 12 oz 93% Lea Ground Turkey (I used 85%) 1/2 Cup Chopped Onion 2 tsp Chili Powder 1 tsp Ground Cumin 1/2 tsp Garlic Powder 1/4 tsp Dried Oregano 1 Cup Chicken Broth 1 Tbsp fresh Lime Juice 1.5 oz Tortilla Chips, Coarsely Crumbled 4 (8 in) Tortillas (I used low-carb) 1/4 Cup Reduced Fat Sour Cream 1/3 Cup Shredded Reduced Fat Cheese 1/2 Cup Chopped Tomato (I used salsa, but this is obviously healthier) Instructions
